Cheesy Garlic Knots

Cheese, garlic, bread…what’s not to love?

It’s the end of April but in these parts, it was rainy, a touch of snow & cold kind of day just right for these & lasagna soup. Perfection.

Ingredients:

1 cup warm water

1 tbsp sugar

1 tbsp yeast

3 cups all-purpose flour

3 tbsps olive oil

8 oz whole mozzarella

4 tbsps unsalted butter

3-4 garlic cloves, pressed

S & P

2 tbsp Fresh parsley

Preparation:

Heat water to 110° F, add sugar & yeast, whisk well until combined; set aside. Let rest for 10 minutes.

In a stand up mixing bowl, add flour & 3 tbsps olive oil. Add water/ yeast mixture to bowl & knead for 10 minutes. Remove from bowl, punch down & knead by hand for several minutes. Oil the bowl & return dough to the bowl, cover, & let rise for 1 hour.

Take mozzarella ball & cut into 12 equal pieces.

Preheat oven to 400° F.

Portion dough into 12 equal pieces. Roll them out & tie into a knot, nestling a piece of cheese into the center, folding & pinching dough to cover.

Add to a lightly greased 9 1/2 x 11 pan, cover & allow to rest for 30 minutes.

Bake for 15 minutes.

While baking, melt butter, press garlic into butter, add S & P, & parsley.

Remove from oven & brush butter over tops.
