
Confession: I was influenced and I don’t regret it. I came across a video of a woman who talked all about the benefits of fresh milled flour bread, all of the nutrients – the kind where you can indeed live off of bread and water alone.

The day after I made it, company was over and the general consensus was “This is the best bread I’ve ever had” and the follow up, “How much would you charge for one of these loafs?”
Equipment needed:
Nutrimill Classic Mill
Bosch Kitchen Machine Mixer
You can use a KitchenAid but everything I’ve read and experienced with other dough, is it starts to struggle BIG TIME & some motors have actually burned out. The reason: the motor of the KitchenAid is on top whereas the motor of the Bosch is on the bottom & it makes a significant difference.
Ingredients:
The following makes 4 loaves of bread
3 1/2 cups of hard white wheat berries (I used Palouse brand)
3 1/2 cups hard red winter wheat berries
2 tablespoons yeast
3 cups water heated to 120°F
2 eggs
2/3 cup of oil (avocado or oil)
2/3 cup honey
2 tbsps sunflower lecithin
2 tsp vital wheat gluten
4 tsp salt
Preparation:
Mill the wheat berries on the fine setting in your Nutrimill. *It’s important to only mill what you need for the day of baking.
In your mixer, add half of the flour (4 1/2 cups), 2 tbsps yeast, and 3 cups water (heated to 120°), mix it & cover for 10 minutes. Then add 2 eggs, 2/3 cup oil, 2/3 cup honey, 2 tablespoons sunflower lecithin, 2 teaspoons vital wheat gluten, 4 teaspoons salt & mix until just combined. Add remaining flour one cup at a time, mixing until just combined. Cover the bowl and rest for 30 minutes. Don’t skip this step – it’s the autolyse. After 30 minutes, knead the dough on a gentle speed for 3 minutes max. Trust the process! Shape dough into a ball, cover, and let rise for 50 minutes, allowing it to double in size. Then cut into 4 equal pieces, shaping into loaves and placing in bread pans that are lined with parchment paper & sprayed with nonstick spray, cover and allow to rise another 50 minutes, letting the dough double in size again.
Bake at 350° F for 25 minutes. Remove from oven & top with butter. Cut into slices. Allow to cool completely before placing in a beeswax lined bag. Store in the refrigerator or freezer.
