
There are times when something as basic as rice can be somewhat of a challenge to get right: too mushy or not quite done. It’s finicky if not done just right. Believe me, I know, I’m speaking from experience. But this recipe, when instructions are followed to a T, makes perfect rice each & every time.
Ingredients:
1 1/2 tbsps oil
1 cup rice
2 1/2 cups water
1 tsp garlic powder
1 tsp onion powder
1 tsp ground cumin
1 tsp oregano
3/4 tsp chicken bouillon
1 8oz can tomato sauce
1 jalapeño
Preparation:
Heat oil in a large skillet to medium high heat and toast the rice until golden brown, stirring frequently so that it doesn’t burn, approximately 6-8 minutes.
Slowly pour in the water (it will steam up), mix, add in seasonings and pour in 1 8oz can of tomato sauce, stir. Allow it to come to a simmer.
Remove the stem of one jalapeño, slice in half, and when the water has begun to simmer, add the jalapeño halves on top. Cover skillet with a lid & allow to simmer for 10 minutes. DO NOT LIFT THE LID. After 10 minutes, reduce the temperature to low and simmer for another 15 minutes DO NOT LIFT THE LID. Remove from heat & allow to rest for another 5 minutes and DON’T TAKE THE LID OFF! After the 5 minutes, remove the lid & fluff the rice.
